DISPATCH #50

Good morning Crew! Hope your week’s off to a good start. We’ve got a lot of spooky Halloween activities happening this week. Here’s the weekly roundup.

TODAY’S CATCH

  • Foley's newest first responders won't need a patrol car. The City Council has approved a new police drone program that will send drones to certain emergency calls, giving officers a bird's-eye view before they arrive. The drones will launch automatically, stream live video, and help assess emergencies or search for missing people. Police say they'll be used for emergency response, not general surveillance. eyes in the sky

  • Another piece of our traffic puzzle is officially in place. The new roundabout on State Route 161, just south of Gateway Boulevard, is now open, wrapping up the major improvements that included the new ICW bridge. Drivers now have additional connections to Roscoe Road and County Road 4. The goal is smoother traffic and more ways to get around town. round and round

  • Things are about to heat up at the Orange Beach Senior Center! The second annual Chili Cook-Off returns Wednesday, Oct. 28, from 4:30 to 6:30 pm, with seven competitors battling for bragging rights and last year's champ, Brad “Trail Boss” Johnson, defending his title. Best of all, everyone gets to taste the chili and vote for their favorite. Throw in live music and free grilled cheese sandwiches, and you've got yourself a pretty tasty evening. May the best bowl win! bowls of glory

TREASURE HUNT

I promise I haven’t forgotten about our little treasure hunting project. Although, I must admit it’s taken a bit longer than I thought it would.

For those who have recently joined us, I’m putting together a Gulf Coast Crew guide to the area’s best thrift stores, antique shops and treasure hunting spots. Together, we compiled a list of over 50 spots and it’s taken me a bit of time to get around to visiting each and every one. I only have four left to go, so the light at the end of the tunnel is almost here.

With every stop I make, I’m taking notes, comparing the browsing experience, looking for the best treasure finds, and slowly building a list of top rated spots that will become a Best of the Gulf Coast guide. I hope to have everything finalized before the holiday shopping season begins just a few weeks from now.

LASAGNA ROLL-UPS

INGREDIENTS
Sauce (*see note below)

  • 2# Ground Beef (or your favorite ground meat, turkey, venison) (I use 1# each beef and Italian Sausage)

  • 1 Md Yellow Onion (Diced)

  • 1 Md Green Bell Pepper (Diced)

  • 2 Tbsp Italian Seasoning

  • 1 25 Oz. Can Tomato Sauce

  • 1 25 Oz. Can Petite Diced Tomatoes

  • 1 25 Oz. Can Crushed Tomatoes

  • 1 12 Oz. Can Tomato Paste

  • 1/2 C Water

  • Salt and Pepper to Taste (wait until the end)

Filling

  • 1 15 Oz. Can Ricotta Cheese

  • 1 8 Oz. Parmesan Cheese

  • 1 16 Oz. Package Frozen Spinach (Thawed & Drained)

Remaining Ingredients

  • 1 16 Oz. Package Lasagna Noodles (*see note below)

  • 1 16 Oz. Package Shredded Mozzarella Cheese

  • Garlic Bread (1-2 Slices Per Person)

DIRECTIONS
1) In a medium mixing bowl blend together the ricotta cheese, parmesan cheese and the spinach. Mix thoroughly. Cover and place in refrigerator.

2) In a skillet over medium high heat begin to brown ground beef breaking the beef up as it browns. When the beef is almost completely browned, with just a little pink still showing. Add Onion, Green Pepper, and Italian Seasoning and continue to cook until onion becomes translucent.

4) Once the onion becomes translucent add tomato sauce, petite diced tomatoes and crushed tomatoes (DO NOT DISCARD CANS). Mix thoroughly. Using the 1/2 C water, rinse the cans pouring water from one can to the other until cans are rinsed thoroughly. Pour into the sauce. Add tomato paste and mix sauce thoroughly.

5) Stirring constantly to ensure sauce does not stick, bring sauce to a simmer. Reduce heat to medium low, cover and simmer for at least 30 minutes stirring occasionally to ensure sauce is not burning or sticking to the bottom of the pan.

6) While your sauce is simmering, cook lasagna noodles according to package instructions. Ensure your noodles are al-dente.

7) Once your sauce has simmered for at least 30 minutes, taste. Add salt, pepper and additional Italian Seasoning to taste. Ensure not to over season as the sauce will absorb these seasonings through additional cooking time. Remove sauce from stove and set aside.

8) Pre-heat oven to 350 degrees.

8) Remove the cheese mixture from the refrigerator.

9) Lightly spray a 13x9 baking pan with cooking spray. In bottom of baking pan, spread 2-3 C of your prepared sauce depending on your taste. I prefer saucier.

10) On a cutting board lay out 12 lasagna noodles. Using a fork or spoon evenly divide and spread cheese mixture along the noodles stopping about a 1/2” from the end of the noodles.

11) Starting with the end closest to you roll the noodles towards the end with no cheese mixture. As you finish rolling each noodle place it into the prepared baking dish. (NOTE: DO NOT roll too tight as you do not want to push the cheese mixture out of the sides of the noodles.)

12) Once you have completed rolling all the noodles and placing them in the baking dish, top with another 2-3 C of your prepared sauce, again depending on your level of saucy. Place in oven and bake for 25-30 minutes. (NOTE: Depending on your oven cooking time may vary a little.)

13) Remove from oven and top with mozzarella cheese. Return to oven and continue to cook until mozzarella is melted and begins to brown on top. Remove dish from oven and let stand for 10 minutes.

14) Meanwhile, prepare your garlic bread in oven or toaster oven.

15) Serve with garlic bread and side salad.

* You will have left over sauce and noodles. Freeze for your next small batch of spaghetti or roll-ups. While this dish is cooking, I roll the leftover noodles and dip them in the leftover sauce as a cook’s snack.
